Carol Kicinski is an author, recipe developer, food writer and TV chef - and she does it all gluten-free. She creates recipes that are simple, healthy and delicious - well beyond what you'd expect for gluten-free meals.
When Carol first found out that she was gluten-intolerant, she was taken aback - wondering how she could live without the gluten-filled cereals, pastas and breads that made up so much of her diet - not to mention the culinary delights she would encounter while traveling the world.
Adding to her frustration was the fact that half of her family was gluten-intolerant and half was not. She needed to prepare meals that everyone would enjoy. This prompted Carol to re-examine the world of food, not in terms of what she couldn't eat... but what she could.
Looking into an endless variety of foods for inspiration, Carol discovered a world full of gluten-free options. As a result, she was able to create dishes that maintained wellness and were undeniably delicious... at the same time.
Not surprisingly, a new food philosophy was born.
